Cauliflower Puree Soup

Cauliflower is a beautiful, healthy vegetable that has many cooking options. Cauliflower puree soup is a rather unusual culinary solution. However, it has excellent taste and an attractive presentation.

Ingredients:

  • Cauliflower – 100 g
  • Butter – 10 g
  • Chicken eggs – 1 piece
  • Almond petals – 25 g
  • Parmesan cheese – 20 g
  • Cream cheese – 120 g
  • Leeks – 30 g
  • White wine – 10 ml
  • Chicken broth – 70 ml
  • Cream 35% – 150 g
  • Dried thyme – 1/3 tsp.
  • Granulated garlic – 1/2 tsp.
  • Salt – 1/5 tsp.
  • Ground black pepper – 1/5 tsp.

Directions:

  1. Cut the leek into circles. Divide the cauliflower into florets.
  2. Melt butter in a pan. Put onion, cauliflower, garlic, and thyme. Fry for 2-3 minutes.
  3. Add the wine, and when it evaporates, add the chicken broth, cream, and cream cheese. Cook over low heat until ready (15-20 minutes).
  4. Grind the finished soup with a blender until smooth. Add salt, pepper.
  5. Fry the almond petals in a dry pan. Decorate the finished dish with a sliced ​​boiled egg, grated cheese, and almond petals.
  6. Exquisite cauliflower puree soup is ready! It has the most delicate texture, contrasting with the crunchy almond petals. It is also characterized by a pleasant creamy taste with exquisite notes of cheese, wine, almonds, spicy garlic, and aromatic spices.
