Cookies with coffee are perfect for a quick breakfast or for a cozy evening with a book.
Ingredients:
- dark chocolate – 1 cup
- unsalted butter – ½ cup
- sugar – ½ cup
- brown sugar – ½ cup
- eggs – 2 pcs.
- vanilla extract – 2 teaspoons
- wheat flour – ¾ cup
- espresso powder – 3 tablespoons
- unsweetened cocoa powder – 1 tablespoon
- baking powder – 1 teaspoon
- salt to taste
Directions:
- Preheat oven to 175°C and line two baking sheets with parchment paper.
- Melt the chocolate and butter. Allow to cool.
- In a stand mixer bowl, beat together both sugars, eggs, and vanilla extract on medium speed until light and fluffy (about 4-5 minutes).
- Slowly pour cooled chocolate mixture into egg mixture, continuing to beat on low speed.
- In a separate bowl, whisk together flour, espresso powder, cocoa powder, baking powder, and salt.
- Gradually add dry ingredients to chocolate mixture, mixing gently with a spatula until combined. The batter will be soft and slightly sticky.
- Using a spoon, drop batter onto the prepared baking sheet. Leave space between cookies as they will expand.
- If desired, sprinkle each cookie with coarse sea salt for a contrasting flavor. Bake for 12-13 minutes.
- Remove from oven. Allow cookies to cool! Enjoy!
