Cookies With Coffee

Cookies with coffee are perfect for a quick breakfast or for a cozy evening with a book.

Ingredients:

  • dark chocolate – 1 cup
  • unsalted butter – ½ cup
  • sugar – ½ cup
  • brown sugar – ½ cup
  • eggs – 2 pcs.
  • vanilla extract – 2 teaspoons
  • wheat flour – ¾ cup
  • espresso powder – 3 tablespoons
  • unsweetened cocoa powder – 1 tablespoon
  • baking powder – 1 teaspoon
  • salt to taste

Directions:

  1. Preheat oven to 175°C and line two baking sheets with parchment paper.
  2. Melt the chocolate and butter. Allow to cool.
  3. In a stand mixer bowl, beat together both sugars, eggs, and vanilla extract on medium speed until light and fluffy (about 4-5 minutes).
  4. Slowly pour cooled chocolate mixture into egg mixture, continuing to beat on low speed.
  5. In a separate bowl, whisk together flour, espresso powder, cocoa powder, baking powder, and salt.
  6. Gradually add dry ingredients to chocolate mixture, mixing gently with a spatula until combined. The batter will be soft and slightly sticky.
  7. Using a spoon, drop batter onto the prepared baking sheet. Leave space between cookies as they will expand.
  8. If desired, sprinkle each cookie with coarse sea salt for a contrasting flavor. Bake for 12-13 minutes.
  9. Remove from oven. Allow cookies to cool! Enjoy!
