Baked Chicken With Oranges

Baking chicken with oranges is an easy and exciting process. Chicken in the oven, saturated with the freshness of oranges, becomes incredibly tender.

Ingredients:

  • Whole chicken (2 kg) – giblets removed
  • 3 tablespoons vegetable oil (olive, grapeseed, or other)
  • 2 tablespoons butter
  • 1 tablespoon seasoning salt
  • 1 tablespoon coarse salt
  • 2 teaspoons ground black pepper
  • 1 tablespoon paprika
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon Italian or poultry seasoning
  • 1 medium yellow onion, sliced
  • 1 orange, sliced
    Orange glaze:
  • 2 tablespoons orange zest
  • 1½ cups orange juice
  • ¼ cup soy sauce
  • ¾ cup brown sugar
  • 1 tablespoon ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Directions:

  1. Preheat oven to 200°C. Mix all dry seasonings in a bowl.
  2. Cut the chicken along the back with kitchen shears, open the rib cage, and make a small cut in the breast. Unfold the chicken so that it lies flat.
  3. Pat the chicken dry with paper towels and rub half the oil on the back. Sprinkle generously with the dry seasonings and press them down lightly. Turn the chicken over, brush with the remaining oil, and repeat the process.
  4. Arrange the onion and orange slices in a buttered baking dish. Place the chicken on top, breast side up, and place it in the oven for 1 hour.
  5. Combine all the glaze ingredients in a small saucepan. Bring to the boil and simmer for 5-10 minutes, until the glaze has reduced by a quarter.
  6. After 30 minutes, start basting the chicken with the glaze every 5-10 minutes until the chicken is done.
  7. Remove the chicken from the oven and let it rest for 5 minutes.
  8. Cut it into portions and serve with orange slices and juices from the pan.
