Banana Cake With Coconut

Ingredients:

Dough:

  • 100 g sugar
  • 80 g butter
  • 1 egg
  • 200 g flour
  • 10 grams vanilla sugar
  • salt to taste
  • 0.5 tsp baking powder

Filling:

  • 3 tbsp. coconut flakes
  • 3 bananas
  • 100 g sugar
  • 3 eggs
  • a little milk

Directions:

  1. Melt the butter and mix with sugar and egg.
  2. Sift the flour with baking powder and salt, add to the liquid mass, and quickly knead the dough.
  3. With your hands, distribute the dough into a greased mold 5 mm thick and put it in the oven to bake for 10 minutes. It should not be ruddy!!! The dough may puff up slightly.
  4. While the dough is baking, prepare the filling.
  5. Mix the coconut flakes with sugar and eggs. If the mass is too thick, add a little milk. But the mass should not be liquid.
  6. Peel the bananas and cut into 5 mm circles.
  7. Take out the cake and immediately place the banana circles on it. Spread the coconut mass evenly on top, trying to completely cover all the bananas and the cake.
  8. Bake for another 20-25 minutes. Cool the finished cake and cut it into cakes of any shape.
    Sprinkle with powdered sugar on top.
