Cauliflower is a beautiful, healthy vegetable that has many cooking options. Cauliflower puree soup is a rather unusual culinary solution. However, it has excellent taste and an attractive presentation.
Ingredients:
- Cauliflower – 100 g
- Butter – 10 g
- Chicken eggs – 1 piece
- Almond petals – 25 g
- Parmesan cheese – 20 g
- Cream cheese – 120 g
- Leeks – 30 g
- White wine – 10 ml
- Chicken broth – 70 ml
- Cream 35% – 150 g
- Dried thyme – 1/3 tsp.
- Granulated garlic – 1/2 tsp.
- Salt – 1/5 tsp.
- Ground black pepper – 1/5 tsp.
Directions:
- Cut the leek into circles. Divide the cauliflower into florets.
- Melt butter in a pan. Put onion, cauliflower, garlic, and thyme. Fry for 2-3 minutes.
- Add the wine, and when it evaporates, add the chicken broth, cream, and cream cheese. Cook over low heat until ready (15-20 minutes).
- Grind the finished soup with a blender until smooth. Add salt, pepper.
- Fry the almond petals in a dry pan. Decorate the finished dish with a sliced boiled egg, grated cheese, and almond petals.
