Classic Salsa Verde Sauce

Classic Salsa Verde sauce is one of the most popular varieties of Mexican sauce. It is a cold mass based on greens with the addition of piquant additions in the form of capers and anchovies.

Ingredients:

  • Mint – 10 g
  • Basil – 10 g
  • Parsley – 30 g
  • Pickled gherkins – 30 g
  • Capers – 10 g
  • Dijon mustard – 2 tbsp
  • Canned anchovies – 10 g
  • Garlic – 3 cloves
  • Olive oil – 70 ml
  • Red wine vinegar – 1 tsp
  • Sea salt – 1/2 tsp
  • Ground black pepper – 1/4 tsp

Directions:

  1. First, blanch the parsley, basil leaves, and mint in boiling water for half a minute. Then plunge into ice water and cool completely. Dry the prepared greens with a paper towel.
  2. Peel the garlic, cut it into small cubes, and sprinkle it with salt.
  3. Press with the flat side of a knife, pressing the salt into the chopped garlic. Chop with a knife.
  4. Place the prepared greens, gherkins, capers, mustard, garlic, and anchovies in a blender bowl.
  5. Pour in 70 ml of olive oil and wine vinegar. Add pepper and grind until smooth.
  6. Thanks to the abundance of fresh greens, the ready-made classic Salsa Verde sauce has an attractive green hue that can decorate any dish of meat, fish, and vegetables. It is characterized by a refreshing sweet and sour taste with pronounced spicy notes.
