Cream of Cauliflower Soup With Cheese

Cauliflower is suitable not only for making salads and side dishes.

Ingredients:

  • Butter – 1 tbsp
  • Onion – 1 piece
  • Garlic – 4 cloves
  • Cauliflower – 380 g
  • Cream cheese – 170 g
  • Cheddar cheese – 80 g
  • Vegetable broth – 1 l
  • Salt – 1/3 tsp
  • Ground black pepper – 1/3 tsp

For decoration and serving

  • Cheddar cheese – to taste

Directions:

  1. Peel and finely chop the onion and garlic.
  2. Melt the butter in a large saucepan. Add the onion and garlic. Fry for 3 minutes, then add the cauliflower florets. Cook for 5-7 minutes, stirring occasionally.
  3. Pour the vegetable broth into the saucepan with the fried vegetables. Cover and cook for 20-25 minutes.
  4. Carefully transfer the contents of the saucepan to a blender bowl. If the blender bowl is small, use an immersion blender. Add cream cheese and grated Cheddar to the soup. Blend until smooth.
  5. Taste the soup, add salt and pepper to taste, and mix thoroughly. Pour the finished soup into bowls and garnish with grated cheese. Serve the creamy cauliflower soup with cheese, hot or chilled, with crispy toast or croutons.
  6. Cauliflower has a relatively neutral taste with a slight nutty flavor, so cheeses come to the forefront of the creamy soup’s flavor palette. They add a delicate, creamy texture and a pleasant creamy-cheese taste. If desired, you can add hot sauce to the soup.
