Cottage cheese is an irreplaceable ingredient for truly delicious pastries and desserts. They are tender, airy, and as a pleasant bonus – high content of protein and calcium, necessary for adults and children. Recipes for such delicacies are varied.
Ingredients:
- Cottage cheese – 250 g
- Cream 35% – 50 ml
- Blueberries – 85 g
- Sugar – 60 g
- Butter – 40 g
- Egg yolk – 2 pcs.
- Lemon zest – 5 g
For decoration:
- White chocolate – to taste
- Lemon zest – to taste
Directions:
- Place the egg yolks and sugar in a deep bowl. Mix until smooth.
- Pour the cream into a saucepan and heat over low heat, without bringing to a boil.
- While constantly stirring the yolk mixture with a whisk, add the hot cream in a thin stream. Pour the resulting mass into a saucepan and, while constantly stirring, bring to a thickening over low heat. Try not to bring the mixture to a boil.
- As soon as the mass thickens and begins to resemble custard, remove the saucepan from the stove and cover. Let cool completely.
- Place the cottage cheese in a deep bowl. Add softened butter, cooled cream, and beat the ingredients with a blender until smooth.
- Prepare the blueberry puree. If you are using frozen blueberries, defrost them at room temperature. Grind the berries using a blender until smooth. Place the resulting puree in a saucepan and simmer over low heat until thickened. Cool the finished mass. To prepare the dessert, you will need 70 g of puree. Divide the curd mass into two equal parts. Add blueberry puree to one, and lemon zest to the other. Mix using a blender.
- Layer the resulting mass in silicone muffin molds. First, the blueberry mixture.
- Top with the lemon mixture. Put in the refrigerator overnight.
- Carefully remove the finished dessert from the molds and decorate with melted white chocolate and lemon zest. Enjoy!
