Eggplant With Walnuts

Eggplants with walnuts are a great option for a tasty and healthy snack and an addition to everyday and festive tables. They are extremely easy to prepare and require a minimum of culinary skills.

Ingredients:

  • Eggplants – 2 pcs.
  • Walnuts – 150 g
  • Garlic – 2 cloves
  • Mayonnaise – 3 tbsp.
  • Parsley – to taste
  • Salt – 1 tsp.

For decoration

  • Walnuts – 50 g

Directions:

  1. Place the sliced ​​eggplants in a deep bowl. Sprinkle with salt and leave for 15 minutes.
  2. Rinse the eggplants in cool water and place on a paper towel.
  3. Place 150 g of walnuts in a blender bowl. Chop.
  4. Add mayonnaise and finely chopped garlic. Mix thoroughly.
  5. Heat vegetable oil in a frying pan. Fry the eggplants on both sides until golden brown. Place on a paper towel to remove excess oil.
  6. Place the nut mixture on each circle. Garnish with the remaining walnuts and parsley.
  7. Eggplants with nuts are an appetizer with a surprisingly harmonious combination of flavors.
