Homemade Mayonnaise

Mayonnaise is rightfully considered one of the most popular sauces. Have you ever tried to cook Mayonnaise at home? In fact, it is easier than it seems! We offer a simple recipe for homemade mayonnaise.

Ingredients:

  • Quail eggs 8 pcs.
  • Dijon mustard 1 teaspoon
  • Lemon juice 1 tablespoon
  • Olive oil 200 ml
  • Salt 1/2 teaspoon
  • Ground white pepper 1/2 teaspoon

Directions:

  1. Put mustard, 4 quail eggs, and 4 quail yolks in a deep bowl.
  2. Add salt, pepper, pour lemon juice, and beat with a mixer until smooth.
  3. While whisking, add a few drops of butter. Whisk until the sauce turns into an emulsion and acquires a light shade.
  4. While continuing to whip, pour in the remaining butter in a thin stream. If the mayonnaise begins to separate, add 1 tablespoon of warm boiled water.
  5. Serve ready-made mayonnaise with usual dishes (as a sauce) or use it to dress vegetable, fish, and meat salads. It can also be used as a base for other sauces. Tip: In order for the mayonnaise to turn out to be tasty and tender, it is necessary to use ingredients at room temperature.
