Ingredients:
- Rigatoni pasta – 250 g
- Cream 30% – 200 ml
- Spinach – 250 g
- Pine nuts – 30 g
- Gouda cheese – 70 g
- Nutmeg – 1/2 tsp
- Salt – 1/4 tsp
- Olive oil – 1/2 tbsp
Directions:
- In a dry frying pan, fry the nuts (2 min.) and transfer to a deep bowl.
- Grate the cheese on a fine grater.
- Boil the pasta in a large amount of boiling salted water (10-20 minutes). In the meantime, prepare the sauce. Blanch the spinach in salted boiling water (3-4 minutes).
- Heat the olive oil in a deep frying pan. Put the spinach in, and after 1 minute, pour in the cream. Simmer, stirring, for 5-6 minutes. Salt and sprinkle with nutmeg.
- Divide the pasta among the plates. Add the creamy spinach sauce. Sprinkle the finished dish with grated cheese and roasted pine nuts.
