Ingredients:
- Chicken breast – 450 g
- Tomato sauce – 680 g
- Pasta (any will do) – 340 g
- Bulgarian pepper (thinly sliced) – 3 pieces
- Sweet onion (thinly sliced) – 1 piece
- Pasta water – 240 ml
- Garlic (chopped) – 2-4 cloves
- Olive oil – 2 tablespoons
- Salt – 1 teaspoon
- Paprika – ½ teaspoon
- Cayenne pepper – ½ teaspoon
- Garlic powder – ½ teaspoon
Optional
- Sliced olives – ¼ cup
Directions:
- Place the chicken breast in a large bowl. Add the salt, paprika, cayenne pepper, garlic powder, and 1 tablespoon of the olive oil. Mix well so that the chicken is completely coated with the spices.
- Then add the chicken to the heated skillet. Cook over medium heat for about 8 minutes on each side, or until cooked through. Transfer the cooked chicken to a plate to rest.
- Then add another tablespoon of olive oil to the skillet along with the chopped bell pepper, onion, and fresh garlic. Cook over medium-low heat, covered, until the onion is caramelized.
- Then add the chopped chicken back to the skillet with the tomato sauce.
- Cook the pasta according to the package directions, then add it to the skillet with the onion, pepper, chopped chicken, tomato sauce, and about 8 ounces of the pasta cooking water.
- Mix well and serve hot.
