Pear salad is a bright gastronomic experience that can decorate an everyday lunch or a festive dinner. It is prepared in a matter of minutes, but the result is always delightful. Light, elegant, aromatic – it combines freshness, sweetness, and a salty contrast, especially when it comes to a salad with pear and cheese.
Ingredients:
- 1 tablespoon light brown sugar
- ⅓ cup dried cranberries (sweetened)
- ½ cup walnuts (chopped)
- 2 pears (thinly sliced)
- 1 tablespoon butter
- 2 ounces (about 60 g) parmesan cheese (sliced)
- 200 g mixed lettuce and spinach
- ½ tablespoons finely chopped shallots
- 1 tablespoon honey
- ⅓ cup extra virgin olive oil
- ½ tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Directions:
- In a blender, combine the olive oil, balsamic vinegar, honey, mustard, shallots, salt, and pepper.
- Blend on high speed for about 20 seconds until emulsified. Pour the dressing into a jar with a lid and refrigerate until ready to serve.
- Melt the butter in a frying pan and add the brown sugar. Add the walnuts and toast for 2 minutes, stirring constantly.
- Transfer the caramelized nuts to a plate and let cool.
- In a large bowl, layer the salad mixture and thinly sliced pears. Add the dried cranberries, parmesan cheese slices, and cooled walnuts. Drizzle the dressing over the salad or serve it on its own.
