Pesto With Sun-Dried Tomatoes

Classic pesto is a thick sauce that always contains basil, parmesan, pine nuts and olive oil. Pesto with dried tomatoes is an unconventional option that deserves attention due to its bright taste.

Ingredients:

  • Sun-dried tomatoes – 150 g
  • Pine nuts – 50 g
  • Garlic – 1 clove
  • Cheddar cheese – 70 g
  • Dried basil – 1/4 tsp
  • Olive oil – 1 tbsp.

Directions:

  1. Pour warm water over the sun-dried tomatoes for 5 minutes.
  2. Grate the cheese on a fine grater.
  3. Finely chop the garlic.
  4. Remove excess liquid from the tomatoes and place them in a blender bowl.
  5. Add pine nuts, cheese, and garlic here.
  6. Add basil and olive oil. Grind until smooth. Add a little more olive oil if necessary.
  7. Pesto with sun-dried tomatoes is a delicious, hearty sauce with a rich taste and aroma of tomatoes and a bright, uplifting color. It is complemented by piquant pine nuts, aromatic garlic, oregano, and salty cheese. Serve the sauce with pasta or baguette slices.
