Ingredients:
- arugula leaves
- tomato
- parmesan
- pumpkin seeds
For the sauce:
- 1 tbsp. pumpkin oil (olive oil is also possible)
- 1 tbsp. balsamic vinegar
- 1 tbsp. soy sauce
Directions:
- Rinse the arugula leaves well, dry them, and arrange them on a plate.
- Place the sliced tomato on top, sprinkle with toasted pumpkin seed,s and arrange the thinly sliced Parmesan.
- Pour over the sauce and serve.
