Shrimp Tempura

Tempura is a general name for a special category of Japanese cuisine. These dishes are united by the method of preparation: as a rule, the ingredients are dipped in a special batter and then deep-fried. However, few people know that the Japanese borrowed the cooking technology and its name from the Europeans. Once upon a time, Portuguese and Spanish missionaries called tempura (from the Latin tempora – times) the period of fasting, when it was forbidden to eat meat, but it was possible to eat vegetables, fish, and seafood. Frying in batter was just one of the methods of preparing these products. To prepare this dish, we used XXL king prawns of size 41/50.

Ingredients:

  • Wheat flour – 100 g
  • King prawns – 20 pcs.
  • Sugar – 1 tsp.
  • Water – 300 ml
  • Corn oil – 370 ml
  • Egg yolk – 1 piece
  • Sake – 1 tsp.

For the sauce

  • Ginger – to taste
  • Soy sauce – 4 tsp.
  • Miso soybean paste – 1 tbsp.

Directions:

  1. To make tempura shrimp at home, first make the batter. To do this, pour water into a deep bowl. Add the yolk and stir it lightly with a whisk. Pour in the sake and stir.
  2. Continue stirring, add flour in portions, leaving a little flour for breading the shrimp. Mix thoroughly. The batter is ready.
  3. Peel the shrimp, leaving the tail. Cut each shrimp along the back and make a small cut across. Squeeze the shrimp along the longitudinal cut and pull it out slightly so that it becomes smoother.
  4. Pour oil into a deep frying pan. Heat it over high heat to 150-180˚C.
  5. Dip the prepared shrimp in flour, then dip them in batter and put them in the heated oil.
  6. Fry for about 1-2 minutes. The finished shrimp should float to the surface of the oil.
  7. Remove it and place it on a plate lined with paper towels to drain off excess oil. Repeat with the remaining ingredients.
  8. To make the shrimp tempura sauce, mix all the ingredients thoroughly. Adjust the amount of ginger to your taste preferences. Serve the shrimp tempura with the sauce.
  9. Shrimp tempura is an appetizer that should be served immediately after cooking. After all, this is how you can enjoy the full flavor of this dish. The airy, crispy batter perfectly complements the tender shrimp, and the homemade sauce gives the shrimp a special piquancy.
