For the patties:
- 500g ground turkey
- Cilantro to taste (fresh), finely chopped
- 3 cloves garlic, grated or minced
- 2 tbsp fresh ginger, finely chopped
- 2 tbsp oil for frying
For the sauce:
- 1 small brown onion, finely chopped
- 100g Thai red curry paste
- 400g coconut milk
- Juice of 1 lime
- Fresh basil to taste, chopped
- Cilantro to taste, finely chopped
- 0.5 tsp chili flakes (optional)
- 3 green onions, finely chopped
Directions:
- In a medium bowl, combine the ground turkey, garlic, ginger, and chopped cilantro. Mix until smooth.
- Using a tablespoon, measure out small portions of the ground turkey. Form patties with wet hands and place on a parchment-lined baking sheet.
- Heat the oil in a nonstick skillet over medium heat. Fry the patties, turning, until golden brown on all sides.
- Then transfer to a plate to make the sauce.
- Drain the excess oil from the skillet, reserving about 1 tablespoon. Fry the onion for 5 minutes, until soft.
- Add all remaining sauce ingredients.
- Bring the sauce to a boil. Add chili flakes for heat, if desired. Return the patties to the pan with the sauce.
- Simmer over medium heat for 15 to 20 minutes, until cooked through.
