Vegetarian Pizza

Despite the popularity of pizzas with sausages, vegetarian pizzas are no less tasty and interesting. For example, in this recipe, in addition to vegetables, quinoa is used – a pseudo-cereal crop that is a superfood. It is a valuable source of iron, magnesium, potassium, and vitamin E, famous for its powerful antioxidant properties. Vegetarian pizza is a great option for a hearty and healthy breakfast. To prepare this dish, you will need small muffin tins.

Ingredients:

  • White quinoa – 220 g
  • Water – 300 ml
  • Canned tomatoes – 400 g
  • Dried basil – 1 tbsp
  • Zucchini – 225 g
  • Cheese – 180 g
  • Olives – 30 g
  • Cherry tomatoes – 100 g
  • Olive oil – 3 tsp
  • Bell pepper – 75 g

Directions:

  1. Rinse the quinoa thoroughly and boil in salted water until tender (15-20 minutes). Remove excess water and transfer the quinoa to a deep bowl.
  2. Meanwhile, cut the zucchini into small cubes. Cut the cherry tomatoes into quarters, finely chop the bell pepper, and slice the olives. Grate the cheese on a medium grater.
  3. Place the canned tomatoes in a blender bowl. Grind until smooth. Add half of the resulting tomato mixture to the quinoa. Mix thoroughly, add basil, pepper, and salt to taste.
  4. Grease muffin tins with a small amount of olive oil. Layer the quinoa, sliced ​​zucchini, remaining tomato sauce, and grated cheese. The final layer should be cheese.
  5. Decorate the preparations with sliced ​​cherry tomatoes, bell peppers, and olives. Bake in a preheated oven at 200°C for 15-20 minutes.
  6. Serve the vegetarian pizza hot or completely cooled. The characteristic neutral zucchini and nutty flavor of quinoa are complemented by bright, sweet, and sour tomatoes, exquisite gooey cheese, sweet peppers, and piquant olives. Thanks to the portioned serving, this dish is convenient to take with you as a hearty snack.
